1 handful fresh thyme sprigs or 2 tsp. dried

1 large bunch Italian flat-leaf parsley, divided

1/4 cup each butter or margarine and all-purpose flour

4 cups fresh sliced Shiitake Mushrooms

2 tbsp. olive oil

3 to 4 lbs. yellow-fleshed potatoes, peeled

4 cloves garlic, peeled but left whole

1/4 cup melted butter or margarine

1/2 cup whole milk or light cream
